Job Description

The trustee for Barry Family Trust is currently seeking an experienced Cook with a real passion and love of food. The successful applicant will have previous experience in supervising a dynamic team and have a genuine passion for great food and service.

DUTIES & RESPONSIBILITIES

  • Daily preparation of food items, including selection and marinating meats
  • Sets up work station according to restaurant guidelines. Regulate temperature of ovens, broilers, grills, and roasters
  • Prepares all food items as directed in a sanitary and timely manner. Bake, roast, broil, and steam meats, fish, vegetables, and other foods
  • Season and cook food according to recipes or personal judgment and experience
  • Follows recipes, portion controls, and presentation specifications as set by the restaurant. Portion, arrange, and garnish food, and serve food to waiters or patrons
  • Ensure quality and safety of food by performing standard and any additional sanitary measures including sweeping of the floors, cleaning of surfaces, as well as proper covering and storage of food items according to standards and procedures
  • Prepare dishes for customers with food allergies or intolerances
  • Estimate expected food consumption; then requisition or purchase supplies, or procure food from storage.

ESSENTIAL KNOWLEDGE AND SKILLS

  • Knowledge of principles and procedures for personnel recruitment, selection, training, compensation and benefits, labour relations and negotiation, and personnel information systems.
  • Knowledge of methods and procedures for serving food, principles of sanitation, and principles of safe food handling required.

MINIMUM QUALIFICATIONS AND EXPERIENCE REQUIRED

  • Cert IV in Commercial Cookery or higher qualification required
  • Minimum 3 years’ verifiable experience at a level Chef de Partie or Commis Chef
  • Must be Australian Citizen or Permanent Resident to apply
