Job Description

• Full Time Sous Chef required at an exceptional venue.

An exciting opportunity has opened at The Springs, Peats Ridge for a Full-Time Sous Chef.

Located in the bush in the hinterland of the Central Coast, The Springs offers a creative farm to plate experience in The Sitting Duck Restaurant and The Duck Inn Bar.

Only 30 minutes from Wahroonga and 40 minutes from Newcastle. The Springs is the ultimate lifestyle destination.

The chic, industrial designed venue offers a 5 star restaurant and bar utilising the local fresh produce to create bush inspired drinking and dining experiences.

The restaurant can seat 100 patrons and the bar and Duck Down lounge an additional 100 patrons.

With an 18 hole golf course situated on site, you will also be required to cater to regular golfing patrons and social groups.

The Springs is renowned for its high end weddings and has once again this year, been nominated for the best wedding venue on The Central Coast.

The candidate for this position must have experience in running large functions and weddings up to 330 people.

You must also be able to contribute to creating our unique and creative menus utilizing the local produce.

The Springs team is very much a “family “team and fitting into our family culture is essential.

As Sous Chef, you will report directly to the Executive Chef, and apply your knowledge and skills to help support and lead a team of skilled chefs. You will ensure consistent high standards in both service and kitchen management.

You will be involved in the following;

• Planning and coordinating daily operations of food preparation
• Developing and managing sections of the kitchen
• Assisting in the execution of all Springs events and functions
• Leading and motivating all kitchen chefs and staff
• Building team/ staff morale
• Training junior staff
• Help maintain food cost margins and labour costs
• Running the kitchen in the Executive Chefs absence.

This is a full time position and the normal working week is Wednesday through to Sunday.
Weekend work is essential as most of The Springs events and restaurant business is Friday through to Sunday.
Whilst there is not usually evening work on Wednesday, Thursday and Sunday night, it is expected on Friday and Saturday nights, but can vary according to the functions that are booked.

A minimum of 10 years experience in a similar venue will be highly regarded, and you must demonstrate ability to perform in a fast paced kitchen.
